French Bistro Parmesan Soup
An indulgent treat for when you have a craving for all that is rich and creamy.
Recipe Serves 4

Ingredients:
1 onion, coarsely chopped
25g butter
100g parmesan, sliced
500ml chicken stock
1l cream
25g bacon, finely chopped
5 branches of chives, finely chopped
1 shallot, finely chopped
1tbsp croûtons
Salt and Pepper
Method:
1 Coarsely chop the onion. Melt the butter in a large pot, add the onions and fry on a low heat for 10 minutes.
2 Add 50g of sliced parmesan, chicken stock, milk and cream. Simmer on low heat for 10 minutes.
3 Meanwhile, finely chop the bacon. Fry for 5 minutes until crispy. Set aside. Finely chop the chives and the shallot. Set aside.
4 When the soup is ready, add the remaining sliced parmesan. Simmer for a further 10 minutes. Mix in a food processor and strain through a sieve. Season with salt and pepper.
5 Place the shallot, chives, croutons and bacon in a soup dish to serve.
