Strawberries and Cream Soup

A taste of summer, even on a winter’s day. 

Preparation: 10mins / Cook: 20mins 

Recipe Serves 4

Ingredients:
240ml water, split in 180ml and 60ml
240ml apple juice
225g sugar
½tsp ground cinnamon
½tsp ground cloves
400g fresh strawberries
450ml strawberry yogurt

 

For an optional garnish:
60ml sour cream
2tbsp milk


Method:
1 In a large saucepan, mix together 180ml water, apple juice, sugar, cinnamon, and cloves over a medium to high heat.  
2 Bring to the boil and then remove it from the heat. 
3 Place the strawberries (with their tops hulled) and the remaining 60ml water in a blender; cover and process until smooth. 
4 Pour the blended strawberries into the apple juice mixture and stir in the yogurt. At this stage you can blend the mixture again to give a smoother finish.
5 Cover over and refrigerate for at least 2 hours, or until chilled, then ladle the soup into bowls. (This soup can also be consumed hot if preferred.)
6 For the optional garnish, combine the sour cream and milk and spoon about 2½tsp into the centre of each bowl.  Use a toothpick to pull mixture out, forming a flower.
