Wanton Soup
Perfect for using up any leftover veg lying around in the fridge
Recipe Serves 2

Ingredients:
6-8 Wantons (frozen)
800ml Chicken/ Vegetable stock
2tbsp Soy Sauce
1tbsp Mirin
1tbsp Rice Vinegar
120g White cabbage
4 Spring onions
100g Mushrooms
2 Garlic cloves
1inch Fresh ginger

To make this vegetarian, use vegetable stock and vegetarian wantons

Method:
1. Cut up the onions, mushrooms, garlic and ginger, and shred the cabbage.
2. Make up the stock, add the soy, mirin and vinegar, then put in pan and simmer. 3. Add the frozen wantons, along with the garlic and ginger, and simmer for 6 minutes.
4. Add the rest of the vegetables and simmer for a remaining 4 minutes.Transfer to bowls and enjoy. Be careful as it will be very hot!

Top Tip: You can use many different vegetables in this recipe, depending on your favourites. Put hard vegetables in with the ginger, and soft vegetables in with the cabbage
